WHAT IS YAKITORI:
In general, Japanese skewers(yakitori) means:
Yakitori (焼きYaki=grilled, 鳥 tori=chicken) Yakiton (焼Yaki=grilled, 豚 ton=pork) Yakimono (焼Yaki=grilled, 焼 mono=items) Kushi Mono (Kushi=skewer, mono=items) Gyu Kushi (Gyu=beef, Kushi=skewer) Yasai Kushi (Yasai=vegetables, Kushi=skewer)
Japanese skewers usually grilled with salt, pepper, or special sauce (tare)
Yakitori焼き鳥/Yakiton焼き豚/Yakimono焼物/KushiMono串物
All these four words refer to skewers items. In Japanese restaurants (Izakaya), they have various grilled skewers on their menu. Yakitoriya (焼き鳥屋) is an authentic place where we can enjoy the traditional and original taste of grilled skewers.
Here are the lists of top 5 Japanese chicken skewers
1. Cho-chin(fallopian tube and ovary)ちょうちん:
What is Cho-chin?
In short, the states of immature egg yolk(kinkan) and Fallopian tube (yurankan/himo) skewered together are called chochin.
Why it is called as cho-chin?
In the Japanese language, cho-chin=lantern. As it looks like a paper lantern hung on a string, so-called cho-chin.
How does it taste:
The immature egg yolk flavor is the same as egg yolk. The Fallopian tube is almost tasteless. They grilled it with the special sauce (tare). As a result, the sweetness that is in the immature egg yolk will combine with special sauce, that makes Cho-chin much strong, sweet, and spicy taste.
How to eat?
Most restaurants recommend eating cho-chin, all at once. As a result, you can taste the texture of the Fallopian tube and the sweetness of immature egg yolk during the same time. But you can also eat by breaking the egg yolk first and entwining the Fallopian tube with the yolk.

2. Reba/Siro reba(liver/white liver)レバー:
In comparison with pork and beef, the chicken liver is very soft. There are two types of it. One simple liver and the other white. The difference is, white livers are those that contain more fats. As a result, fat makes white livers softer than simple ones.
Although Livers grilled with a special sauce (tare) are delicious. But I will suggest you try the liver, grilled only with salt and green onion slices.
3. Sasami(chicken breast)ささみ:
The chicken breast is a healthy part of a chicken. Why? Because it is very nutritious and is low in fat. Most of the Izakaya restaurants grill it only with salt and serve to customers putting wasabi, plum paste, mayonnaise, etc. over it.
They also serve it as sashimi (toriwasa in Japanese), with ponzu sauce or shoyu sauce and wasabi. For sashimi, chicken breasts are put in boiling water for about 5 seconds and cooled by ice water.
4. Negima(chicken and leek)ねぎま:
It is the most common Japanese skewer (Yakitori) in Japan. Japanese uses chicken thigh meat and leeks, which skewer is called Negima. You can order it with salt, pepper, or sauce taste. You must try the sauce (tare) taste. The combination of chicken meats and leek with special sauce (tare) is very soft, juicy, and sweet.
5. Tori hatsu(chicken heart)とりはつ:
Chicken hearts are very soft, juicy, and tastes too good. They simply clean the unnecessary parts of chicken hearts and make skewers. Some of us may hesitate to eat, as appearance is like a heart.
HOW MUCH DOES YAKITORI COST IN JAPAN:
The prices per skewer vary depending on the store. The price range is about 90 yen to 130 yen
HOW TO MAKE YAKITORI TARE AT HOME:
To be honest, it is impossible to make real Japanese Yakitori tare at home. We cannot produce the taste that Japanese Yakitori restaurants have. They have been using and reusing the same tare keeping the same based on it. This process continues over the years and makes their Yakitori sauce (tare) very special and very secret.
If you want to try it at home, I found this way is very easy to make tare.
